Usually on Sunday evenings I am trying new recipes that have drawn my attention during the week. Chickpeas is one of my favorite foods and wanting to taste it with someting new… and Maninio’s recipe appeared infront my facebook timeline at the right time.

Today’s recipe it’s vegan, gluten free, highly nutritious, and truly heavenly delicious! Actually I am really “mad” and obsessed with this dish. The combination of curry, lime and the coconut cream matches perfectly with the vegetables and chickpeas. 

This dish is an inspiration from my 6 month course in “Professional Plant Based Cuisine”. I have passed the final exams and I am very happy for that!! 🙂 Actually a cake would be more appropriate for such a thing but I had to post this recipe first, because it’s sooooo damn good! ( Cake and celebration it’s on the way though 🙂 )

Chickpeas Origin

The chickpea or chick pea (Cicer arietinum) is a legume of the family Fabaceae, subfamily Faboideae. It is also known as gram, or Bengal gram, garbanzo or garbanzo bean, and sometimes known as Egyptian pea, ceci, cece or chana, or Kabuli chana (particularly in northern India). Its seeds are high in protein. It is one of the earliest cultivated legumes: 7,500-year-old remains have been found in the Middle East.


Chickpeas: Health Benefits

Though the most common type of chickpea appears round and beige, other varieties include colors such as black, green, and red. Like other legumes such as beans, peas and lentils, chickpeas are prized for their high protein and fiber content, and also contain several key vitamins and minerals known to benefit human health.

Patsy Catsos, MS, RDN, LD, a registered dietitian and author of “IBS – Free at Last!” suggests that increasing fiber consumption in individuals suffering from irritable bowel syndrome (IBS) can be a challenge, however, chickpeas offer a source of fiber that is well-tolerated by IBS patients. Who is behind Food & Travel Blog?

Welcome to Maninio, a blog where you can discover my Greek – International food stories and my wanderlust tales.

I am Penelopi from Greece (Nafpaktos), studied Mechanical Engineering in Athens,  where I worked for a few years. I did my first trip abroad (Prague) in 2002 and I totally fell in love with the place. Since then, I did not stop travelling.

At first, it was around Greece and on 2005 I decided to move to Scotland (Edinburgh) to feed my travel bug and to study for a year. During 2006 – 2015, I worked in Qatar (with a break between – 1.5 years), where in parallel, start reconnecting with my second passion, Food! During my last 3 years in Middle East, I was deeply involved with culinary, studied a Chocolatier program and I start sharing all my goodies with my friends and colleagues. As a result, I started a part-time catering, offering homemade Greek food and sugar paste cakes for almost 2 years.

Since then, my travel’s character has changed…wherever I travel I am committed to fulfilling my role as a new “bee” to local food, discovering food trends, best restaurants and culinary experiences around the globe.

All the recipes are my own experiments, things that I learned through my mum’s cooking, my culinary studies / research and through my travels. In addition, I will be posting some creations from my favourite bloggers.

I am currently based in France, studying French, discovering the local cuisine, travelling and writing about my food and travels. My blog’s name is the name that my niece calls me… Yeah I know, I am a happy silly aunt 🙂
